I finally worked out why my Chillies were bordering on by being inedible, and were akin to eating molten lava. I kept reducing the amount of chilli in the seasoning to no avail when I eventually decided to taste all the spices individually to see what might be adding the magma effect. Cayenne pepper is definitely the culprit, seriously hotter than I thought, the amount I was adding was just insane. I was basically having a little mince and onion with my Cayenne pepper!
