We’ve been making our own burgers at home for a while now. Well I saw we, but Rebecca is a veggie so while we both make them, only I get to eat them. We don’t make them very often but when we do we try and make them better than before — that’s the fun of cooking.
We used to try several different recipes per batch and do taste tests, but a while back Rebecca hit on a really great combination of seasoning and having had some tonight, I think it’s a damn fine burger ™.
The recipe uses minced meat and very finely chopped onion for the base mixture. Added to this is a seasoning made from sea salt, black pepper corns, yellow mustard power and ginger ground up with a pestle and mortar. We’ve not gotten round to recording the measurments yet, we just make it so it looks and smells right. Mix it all up in a bowl, shape into thin pates with your hands, and fry on a medium heat for 3 to 4 mins on each side. Serve in a fresh burger bun with onions fried in buffer and streaky bacon or Jalapeño. If the cooking time takes too long, then the pates are too thick.
